Been a few months, busy, taking care of my older brother. Lost Ed on the 18th of may. He went quick without pain.
Made flap jacks (pancakes) for the wife the other day, be good snacks at the Tavern Geglash. You cab make then in several different ways with fresh fruit and whip cream.
Hoe cakes, made with corn meal wrapped around a sausage. They're called that because field hands would cook them on a hoe. (Grin)
You need a good cast iron pan or griddle, mixing bowl, ladle, large spoon, hamburger flipper to turn the cakes when they bubble at the edges. Bacon, sausage or Ham goes good with flap jacks.
Dry stuff: Wheat flour and or corn meal, 2 to 1 parts is good. Baking soda & baking powder to make them fluffy. Teaspoon of sugar, for the hell of it. Pinch of salt, nutmeg, ginger, pepper and cinnamon for seasoning.
Wet stuff: 1 egg, tablespoon of oil, so the cakes won't stick to the pan. Milk, butter milk or cream, just enough to make a thick batter. Don't over mix! Mix for just ten seconds and let the batter sit while you tend to the meat cooking. Lumps are okay.
Before you cook them, have butter, honey, maple srupp, fresh or dried fruit and whip cream ready if you want.
A drop of water should dance on the heated pan. Use the ladle to to make a small cake as a test, so you can adjust the heat. Flip when the bubbles form on the edges. It should be golden brown not dark brown. You could put a pat of butter on the cake after it is turned.
Darn it, forgot to tell you to add fruit or chacolet chips after you put the batter on the pan.
Adjust the heat as needed and make a mess of flap jacks! Butter, surp or whip cream go good with them.
You did cook the bacon, sausage or ham.
A cup of coffee and your good to eat flap jacks.

As for this weekend or the next, we are have CATAPULT WARS with water balloons for the kids. Real hot here today with high humitity and no wind. I hope the kids will have fun, they're the future.
