I want to know how telekinesis helps Energy Shield. I'm pretty sure it reduces MP reduced per HP taken, but by how much? It's frustrating to see no numbers to help me judge how valuable it is and if I should max telekinesis out for energy shield.

I cant tell you how many % its on, but i've been playing quite ALOT of sorc in my days and it's defently worth the time and effort to max it, because it makes your MS very much tougher, and for the 2nd telekinese owns at killing single bossies due to knockback :)

2nd telekinesis owns at killing bosses? what? it picks up items, I thought? :|

True enough its able to pick up items at a distance.
But with enough points in it, it can do substantial damage. And further more its knockback ability is pure ownage vs bossies and alike. :)
And you will have enough points in it if your going the sorc way of having a fully working ES(EnergyShield.)

also another question:
what's the best ice armor to get? im hearing chilling armor is the best... true?

In my opinion its shiver armor, but that depends wether you spend skill points on the armors or not. because if you dont thats the one that will give you the most def.
Atleast according to d2net ;)
Then again it's all about what kind of sorc you wanna play again.
